A Canberra-based food business renowned for its slow-cooked roasts and wood-fired spits is making its first interstate move.

Spit Shack, which is inspired by a blend of Croatian and Australian roasting and grilling traditions, will start trading at Tewantin on Saturday, October 31.

Owner Kreso Spelic looked forward to the occasion.

“We are incredibly proud to bring cooking traditions and flavours from Croatia and into Queensland for the first time,” he said.

“I can’t believe we started 15 years ago in a country paddock, 20km from Braidwood in the middle of nowhere, cooking on the side of the road. People would stop on their way to and from the (New South Wales) coast.

“Since then, we have evolved and expanded to several permanent locations in Canberra.

“It has taken a long time to get to our first franchise store.”

The menu is centred around premium roast lamb, pork and beef, as well as traditional Croatian favourites like cevapcici (skinless sausages), raznjici (skewers) and mixed grill.

It includes spit-roast rolls and crackling, meat shack stacks and home-made sides.

The Spit Shack boasts a range of dishes.

“At Spit Shack, we live for the slow-cooking process,” Mr Spelic said.

“We cannot wait to welcome the Tewantin, Noosa and Sunshine Coast community through our doors to share the home-made flavours that we pour our hearts into every day.”

The new eatery, at Shop 3, 10 Memorial Avenue, will open on Saturday at 10am, and 1000 free samples will be given away (one per person).
