With viral cold foams and a vibrant design, a new cafe created by two local mothers is already drawing crowds in Peregian Beach.

Salty Mermaid Cafe has been launched by Kelly Knott and Lisa Wisken, who bring decades of combined experience to the Sunshine Coast hospitality scene.

Ms Wisken, who previously owned and operated Highlands Merchant cafe in New South Wales for 10 years, said the new venture built on a proven formula.

“Highlands Merchant was an iconic turning point for cafes in the Highlands. I built it in 2016 on the cusp of Moss Vale taking off as a food and shopping destination,” she said.

“We became a ‘must stop’ for travellers from Sydney, Canberra, Newcastle, Blue Mountains and beyond.

“We’re using the exact same formula to create something special in Peregian – great coffee, all food made in house and personal, kind service.”

After stepping away from the industry for two years, Ms Wisken has teamed up with Ms Knott, who brings 20 years of experience in human resources, to create what they describe as a welcoming and energetic space.

“Our vision was to create a space that feels alive with energy, a place you want to spend your time and hang out,” Ms Wisken said.

“Kelly and I love interiors, design and fashion. We made all the design decisions ourselves and are very proud of how fun and interesting it feels.

“We wanted the opposite of beige and vanilla and we think we have achieved that.”

Salty Mermaid Cafe is located at 7/ 224 David Low Way, Peregian Beach.

The cafe offers a menu focused on freshness and quality, with all food, including cakes and pastries, made in-house daily.

“We have a large selection of baguettes, rolls, salads and breakfast/lunch options each day,” she said.

In addition to its food offering, the cafe features a specialty drinks menu, including viral cold foam creations, smoothies with collagen and protein, and internationally recognised coffee.

“We are one of only two cafes on the Sunshine Coast that serve the internationally awarded coffee roaster Single O,” Ms Wisken said.

The cafe also serves Japanese soft serve and coffee until 4pm each day.

Strong interest on social media has translated into real-world success, with customers travelling from across Queensland to visit.

“Our social media account has received over 320k views in the last 30 days, people from Cairns to Toowoomba coming in to tell us they have been following our build journey,” Ms Wisken said.

The cafe offers sweet treats, too.

Ms Wisken said the pair chose to open in Peregian Beach because of their connection to the area.

“It’s our home and we love it here,” she said.

“We wanted to add to the community. The first two weeks of trade have been mind-blowing with people lining up out the door. We are very grateful for everyone’s support.”

Looking ahead, the owners plan to expand the offering with an afternoon drinks experience.

“We’re only just beginning. In the next stage we will start working on a boutique wine list so you can have a drink while soaking up the afternoon Peregian energy,” she said.
